Rice roughly triples in volume as it cooks, but exactly how much it expands — and how much water it needs — depends on the type. This calculator converts between uncooked and cooked amounts in either direction, shows the water needed to cook it, and estimates how many servings that yields.

Why rice expands differently by type

All rice absorbs water and swells as it cooks, but the amount varies with the grain's starch content and bran layer. White long-grain, jasmine, and basmati rice have had their bran removed, so they absorb water quickly and yield close to 3 cups cooked per cup of dry rice. Brown rice keeps its bran layer intact, which slows water absorption and needs more time and liquid to soften fully — it typically yields a bit less cooked volume (around 2.75×) even with more water added. Sushi rice is a short-grain variety cooked with less water on purpose, producing a stickier, denser result with a lower yield multiplier (around 2.5×).

Reading the water ratio

Water ratios are written as rice:water — a 1:2 ratio means 2 cups of water for every 1 cup of dry rice. White rice generally uses 1:2, while brown rice needs closer to 1:2.5 because its bran layer resists softening. Jasmine and basmati rice, being drier and more aromatic long-grain varieties, often use slightly less water (around 1:1.75) for firmer, more separated grains. Sushi rice uses the least water of the group (around 1:1.25) because a stickier texture is the goal, not fluffy separated grains.

Limits and edge cases

These multipliers and ratios are typical starting points, not exact physics — altitude, pot type, simmer time, and how tightly the lid seals all shift the outcome slightly, and rice cookers with a built-in fuzzy-logic sensor may need marginally less water than stovetop absorption cooking. Aged rice (rice stored for a year or more) tends to need a touch more water than fresh-milled rice. If a bag's package instructions differ from the ratios here, defer to the package — brands vary slightly in milling and moisture content.
