Why toppings scale with guests, not tacos

Unlike tortillas and meat, toppings are added to individual tacos in variable amounts, so this calculator scales them per guest rather than per taco — a guest eating 2 tacos and a guest eating 4 tacos both tend to use a similar total amount of salsa or cheese across their meal. Each topping (shredded cheese, lettuce, salsa, sour cream, diced tomatoes, and diced onions) uses a standard ounce-per-guest ratio drawn from common taco bar spreads, then rounds up to the nearest buyable package — a bag, jar, container, or individual produce item.

Adjusting for your specific taco bar

These are planning estimates based on average appetites and a standard topping spread — adjust tacos-per-person upward for an event where tacos are the entire meal, or downward if they're one of several dishes on a buffet. If you're offering a vegetarian option (beans, for example), a rough rule of thumb is to substitute it for meat at roughly a 1:1 weight ratio, though bean-based fillings can be bulkier by volume.
